ALLNUTRITION Coconut Oil is an oil commonly used for frying. Refining is a very complex process carried out using high temperatures and chemicals – most often hexane. During refining (purification), tocopherols, polyphenolic compounds, and sterols are partially removed.
In terms of quality, it is inferior to unrefined oil, but its strong advantage is versatility. It can be used both in “raw” dishes, e.g. salads, to aid absorption of fat-soluble vitamins (vit. A, D, E, K), as well as for frying, baking, and grilling. It can be stored at room temperature for a long time without worrying about rancidity.
